Cooked Shrimp Caesar Salad With Dijon Dressing

Ingredients

  • 1 lb bag Newport Cooked and Peeled Tail-off Shrimp
  • 1 Clove Garlic, minced
  • ½ tsp Dijon Mustard
  • ½ tbsp Lemon Juice
  • ½ tbsp Olive Oil
  • 1 Hard Boiled Egg, chopped
  • ½ Head Romaine Lettuce, chopped
  • 2 Anchovy Fillets, optional
  • Salt and Pepper to taste

Directions

  1. Thaw the cooked shrimp overnight per instructions on the package.
  2. Mix the mustard, oil and lemon juice in a small bowl.
  3. Put chopped lettuce with shrimp in bowl and pour dressing over the top and mix well.
  4. Season to taste and garnish with the cooked eggs and anchovy fillet.
