Halibut Monterey



  • 2 lbs Halibut fillets, cut into portions
  • ¾ cup Pink salad shrimp
  • ½ cup Pepperjack cheese, shredded
  • 2 cups Green onions, chopped
  • 2 tbsp Water chestnuts, cut into thin julienne strips
  • 2 tbsp Bacon, crisply fried and finely chopped
  • 2 tbsp Pimento, chopped
  • 2 tbsp Mayonnaise
  • 1 tbsp Lemon juice


  1. Combine all of the ingredients, except the halibut, and mix thoroughly.
  2. Set aside.
  3. Using a thin, sharp knife, cut a deep pocket into the top or the side of each halibut portion, making sure not to cut closer than ½" from either edge.
  4. Preheat oven to 400°F.
  5. Using a teaspoon and the tip of your finger, gently stuff each portion with the shrimp mixture.
  6. Place stuffed fillet portions on lightly greased sheet pan and bake for 16-18 minutes.
