Roasted Halibut with Yellow Pepper + Tomato Sauce

Ingredients

2 yellow bell peppers, sliced
2 cups baby tomatoes
2 cloves garlic, whole
fillets of Pacific Sustainable Seafood's Wild Pacific Halibut

Directions

Preheat oven to 400 and line a baking sheet with parchment paper. Add pepper slices, tomatoes and garlic cloves to the baking sheet. Drizzle with olive oil and toss to coat with your hands. Sprinkle with sea salt and pepper and roast for 25-30 minutes until they start to brown.

When the veggies are almost done, preheat a large skillet with a splash of olive oil over medium- high heat. Place halibut pieces on the skillet, getting a good sear on the first side before flipping it. Cook until done, approximately 6 minutes total.

In the meantime, add veggies to a blender with ½ cup water or olive oil and some extra sea salt and pepper. Blend to combine. Add sauce under or over the fish, with your choice of vegetables.
