Shrimp Pasta Primavera

Ingredients

  • 2 lb bag Peeled and Deveined Newport Shrimp
  • ¼ lb Asparagus cut in 2 inch lengths
  • ¼ lb Fresh Snow Peas
  • 1 Red Bell Pepper cut into strips
  • 4 Sundried Tomatoes, chopped
  • 1 tsp Garlic, chopped
  • 1 tbsp Fresh Basil, chopped
  • 1 lb hot cooked Linguini
  • 2 tbsp Olive Oil
  • Shredded Parmesan Cheese

Directions

  1. In a skillet, sauté shrimp in oil for 1 minute.
  2. Add vegetables and garlic. Continue to cook for 2 more minutes.
  3. When shrimp are done, toss in linguini and basil.
  4. Sprinkle with parmesan and serve immediately.
