Blackened Catfish with Cheese Grits

4 catfish filets
2 Tbsp melted butter – unsalted
2 Tbsp blackened seasoning
1 Tbsp olive oil
1 cup old fashioned grits
3 ½ cups low-sodium chicken broth
1 cup heavy cream
1 tsp salt
1 tsp onion powder
1 tsp garlic powder
½ tsp pepper
¼ tsp cayenne pepper, optional
1 cup smoked gouda cheese, shredded
Directions
- In a saucepan, bring chicken broth and heavy cream to a simmer. Slowly whisk in the grits, reduce heat to low, and cook for 15-20 minutes, stirring often until thick.
- Stir in salt, onion powder, garlic powder, pepper, and cayenne (if using). Remove from heat and mix in shredded smoked gouda cheese until smooth. Cover and keep warm.
- Pat the catfish dry, brush with melted butter, and coat evenly with blackened seasoning.
- Heat olive oil in a skillet over medium-high heat. Cook the catfish for 3-4 minutes per side until blackened and cooked through.
- Spoon cheesy grits onto plates and top with the catfish. Serve immediately.
