Blackened Catfish with Cheese Grits

Ingredients

4 catfish filets
2 Tbsp melted butter – unsalted
2 Tbsp blackened seasoning
1 Tbsp olive oil
1 cup old fashioned grits
3 ½ cups low-sodium chicken broth
1 cup heavy cream
1 tsp salt
1 tsp onion powder
1 tsp garlic powder
½ tsp pepper
¼ tsp cayenne pepper, optional
1 cup smoked gouda cheese, shredded

Directions

  1. In a saucepan, bring chicken broth and heavy cream to a simmer. Slowly whisk in the grits, reduce heat to low, and cook for 15-20 minutes, stirring often until thick.
  2. Stir in salt, onion powder, garlic powder, pepper, and cayenne (if using). Remove from heat and mix in shredded smoked gouda cheese until smooth. Cover and keep warm.
  3. Pat the catfish dry, brush with melted butter, and coat evenly with blackened seasoning.
  4. Heat olive oil in a skillet over medium-high heat. Cook the catfish for 3-4 minutes per side until blackened and cooked through.
  5. Spoon cheesy grits onto plates and top with the catfish. Serve immediately.
