Broiled Oysters with Bourbon Brown Sugar Butter

Ingredients

2 dz in-shell oysters, freshly shucked
1 garlic clove, finely chopped
1 Tbsp chipotle pepper in adobo sauce, finely chopped
2 tsp light brown sugar
3 Tbsp unsalted butter, room temperature
2 tsp bourbon
4 Tbsp coarse kosher salt

Directions

  1. Mix garlic, chipotle pepper, brown sugar, butter, and bourbon in a small bowl until smooth.
  2. Heat broiler. Arrange shucked oysters on a rimmed baking sheet. Use coarse kosher salt underneath to level and stabilize each shell. Spoon ½ teaspoon butter mixture onto each oyster.
  3. Broil oysters until butter mixture is melted and sugar is beginning to caramelize, about 3 minutes.
  4. Serve and enjoy!
