Cajun Argentinean Shrimp Skewers

1 lb Argentinean Peeled & Deveined Shrimp, thawed
¼ cup salted butter (4 Tbsp)
4 garlic cloves, minced
1 Tbsp Cajun seasoning
1 Tbsp lemon juice
½ red bell pepper, cut into 1-inch pieces
½ green bell pepper, cut into 1-inch pieces
½ yellow bell pepper, cut into 1-inch pieces
6-8 wooden skewers (8-inch)
Directions
- Soak the wooden skewers in water for 30 minutes before grilling (It will avoid burning of the sticks). Preheat grill to medium high (400˚F). Note: Grill needs to be cleaned to prevent shrimp from sticking to the grate.
- Combine all Cajun butter ingredients in a small saucepan. Bring to a simmer then remove from heat. Pour half of the mixture into a bowl and leave remaining marinade in pan (brush on half now and brush on remaining marinade after shrimp are grilled).
- Rinse shrimp and pat dry with paper towels. Skewer 4 shrimp and 4 peppers on each skewer (do not leave spaces in between). Lay shrimp on baking sheet and finish skewering the remaining shrimp and peppers. Brush on Cajun butter on top side, refrigerate for 2 minutes until butter firms up. Flip shrimp over and repeat.
- Place the skewers on the grill and cook for 2-3 minutes per side, or until the shrimp are pink and fully cooked. Remove shrimp from grill and brush on reserved Cajun butter. Serve and enjoy!
