California Roll Sushi Bowl

Ingredients

8-10 oz Imitation Crab, diced
1 ½ cups sushi rice or short grain rice
3 cups water
2 Tbsp Rice Vinegar
1 large avocado, diced
1 ½ cup english cucumber, diced
2 Nori sheets, sliced or crumbled
½ cup mayo
2 tsp Sriracha
2 tsp Soy Sauce, more for serving
Black and Toasted Sesame Seeds for garnish
Green onions for garnish

Directions

  1. Rinse the rice under cold water. Add the rice and water to a medium pot and bring a boil over medium-high heat. Cover and reduce the heat to low and simmer for 18-20 minutes until the water is absorbed and rice is tender.
  2. Add the cooked rice to a large bowl and drizzle with the rice vinegar then stir to combine. Set the rice aside and cool completely.
  3. Whisk together the mayonnaise and sriracha in a small bowl. If desired, add in a tablespoon of water to thin the sauce.
  4. Divide the rice between four bowls. Top with avocado, imitation crab, and diced cucumber, and Nori.
  5. Drizzle the spicy mayo over top.
  6. Garnish with sesame seeds and green onion. Serve immediately with some soy sauce on the side.
