8-10 oz Imitation Crab, diced
1 ½ cups sushi rice or short grain rice
3 cups water
2 Tbsp Rice Vinegar
1 large avocado, diced
1 ½ cup english cucumber, diced
2 Nori sheets, sliced or crumbled
½ cup mayo
2 tsp Sriracha
2 tsp Soy Sauce, more for serving
Black and Toasted Sesame Seeds for garnish
Green onions for garnish
Directions
- Rinse the rice under cold water. Add the rice and water to a medium pot and bring a boil over medium-high heat. Cover and reduce the heat to low and simmer for 18-20 minutes until the water is absorbed and rice is tender.
- Add the cooked rice to a large bowl and drizzle with the rice vinegar then stir to combine. Set the rice aside and cool completely.
- Whisk together the mayonnaise and sriracha in a small bowl. If desired, add in a tablespoon of water to thin the sauce.
- Divide the rice between four bowls. Top with avocado, imitation crab, and diced cucumber, and Nori.
- Drizzle the spicy mayo over top.
- Garnish with sesame seeds and green onion. Serve immediately with some soy sauce on the side.
