Cod En Papillote with Tomatoes and Olives
4 6oz Cod Loin Portions Buy Here
¼ c. Olives
¼ c. Chopped tomato
1 tbs olive oil
Salt and Freshly ground white pepper
1. Preheat oven to 425°F
2. Place cod on parchment paper and season cod portions with salt and white pepper. Top with olives and chopped tomato and season again with salt and white pepper. Drizzle with olive oil and fold the paper over the fish.
3. Bake for 20 minutes then let rest for 2-3 minutes and carefully open the papillote. Serve and enjoy!
