Coldwater Shrimp Lettuce Wraps
1 lb. Coldwater shrimp
1 head of butter lettuce (bib/Boston lettuce)
1/2 c red onion, chopped
1/2 c cucumber, chopped
1 Tbsp lime juice
1 tsp fresh ginger, grated
1 Tbsp rice wine vinegar
1 Tbsp sesame oil
3/4 cup Greek yogurt
1/4 cup mayonnaise
1/4 cup fresh cilantro, chopped
1/8 cup fresh dill, chopped
1 clove garlic, finely minced
2 Tbsp lime juice
Kosher salt and black pepper to taste
1. Prepare the sauce by combining all ingredients and mixing together in a small bowl, set aside.
2. Combine red onion, cucumber, lime juice, ginger, rice wine vinegar, and sesame oil in a large bowl.
3. Pat dry the coldwater shrimp. Add to the cucumber onion mixture and toss to coat.
4. Spoon the shrimp mixture into each lettuce leaf, drizzle with the sauce and enjoy!
