Coldwater Shrimp Lettuce Wraps

1 lb Coldwater shrimp
1 head of butter lettuce
½ cup red onion, chopped
½ cup cucumber, chopped
1 Tbsp lime juice
1 tsp fresh ginger, grated
1 Tbsp rice wine vinegar
1 Tbsp sesame oil
Sauce:
¾ cup Greek yogurt
¼ cup mayonnaise
¼ cup fresh cilantro, chopped
⅛ cup fresh dill, chopped
1 clove garlic, finely minced
2 Tbsp lime juice
Kosher salt and black pepper to taste
Directions
- Prepare the sauce by combining all ingredients and mixing together in a small bowl, set aside.
- Combine red onion, cucumber, lime juice, ginger, rice wine vinegar, and sesame oil in a large bowl.
- Pat dry the Coldwater shrimp. Add to the cucumber onion mixture and toss to coat.
- Spoon the shrimp mixture into each lettuce leaf, drizzle with the sauce and enjoy!
