4 large razor clams
½ cup oil for frying, or as needed
Panko crumbs to coat clams, finely crushed
½ tsp ground black pepper
¼ tsp ground cayenne pepper
¼ tsp paprika
¼ tsp garlic powder
2 eggs, beaten
Chopped chives for garnish
Garlic aioli, for dipping
Directions
- Heat the oil in fryer to 350°F. Clean, rinse, and tenderize clams with a steak tenderizer mallet.
- In a bowl, mix crushed Panko Crumb with black pepper, cayenne pepper, paprika, and garlic powder. Place eggs in a separate bowl. Dip clams into eggs, then into cracker mixture to evenly coat.
- Fry clams in the hot oil until golden brown. 2-3 minutes depending on size of your clams
- Serve hot with garlic aioli and chives as garnish
