Fried Clams with Aioli Dipping Sauce
4 large razor clams
½ cup oil for frying, or as needed
Panko Crumb to coat Clams, finely crushed
½ teaspoon ground black pepper
¼ teaspoon ground cayenne pepper
¼ teaspoon paprika
¼ teaspoon garlic powder
2 eggs, beaten
Chopped chives for garnish
1. Heat the oil in fryer to 350F. Clean, rinse, and tenderize clams with a steak tenderizer mallet.
2. In a bowl, mix crushed Panko Crumb with black pepper, cayenne pepper, paprika, and garlic powder. Place eggs in a separate bowl. Dip clams into eggs, then into cracker mixture to evenly coat.
3. Fry clams in the hot oil until golden brown. 2-3 minutes depending on size of your clams
4. Serve hot with garlic aioli and chives as garnish
