Hazelnut Crusted Mahi Mahi

1 lb skinless mahi mahi fillets
1 cup hazelnuts, minced
½ cup panko
½ cup Parmesan, finely grated
2 Tbsp parsley, minced
1 tsp kosher salt & pepper
3 tsp Dijon mustard
2 Tbsp Olive oil
1 lemon, sliced
Directions
- In shallow dish, toss hazelnuts, panko, parmesan and parsley, salt and pepper.
- Spread Dijon on both sides of fish and dredge in crumb mixture to cover.
- In large skillet, heat olive oil over med-low heat. Cook fish until golden brown, about 3 minutes per side.
- Garnish with lemon.
