Honey Jalapeno Shrimp Over Spinach

Ingredients

1 bag honey jalapeño shrimp
2 Tbsp vegetable oil, divided
1 (10-ounce) bag fresh spinach
1 cup red bell pepper, cut into strips
2 tsp fresh garlic, chopped
¼ cup green onions, chopped

Directions

  1. Heat 1 Tbsp vegetable oil in a large pan/skillet. Add the spinach and stir fry for 1 minutes just until spinach is wilted. Remove from pan and keep warm.
  2. With clean skillet add 1 Tbsp vegetable oil and heat up and add shrimp, red bell peppers, garlic, and green onions. Sauté for 3-4 minutes and serve over the spinach.
  3. Heat 1 tsp vegetable oil in a large nonstick skillet over medium heat. Add chopped spinach, and stir-fry for 1 minute or until wilted. Remove from pan, and keep warm.
