Mahi Mahi Tacos with Mango Salsa

4 mahi mahi portions
1 Tbsp butter
1 Tbsp olive oil
8 corn tortillas
2 Tbsp blackened seasoning
2 mangos, peeled and chopped
2 Tbsp cilantro, finely chopped
3 Tbsp red onion, finely chopped
1 red bell pepper, chopped
1 jalapeno, seeded and minced
1 large lime, juiced
2 cups cabbage mix or coleslaw mix
½ cup mayo
½ cup sour cream
½ tsp garlic powder
4 Tbsp lime juice
2 Tbsp chipotle sauce
2 limes, sliced
Salt and pepper to taste
Directions
- To prepare mango salsa: Combine mango, cilantro, onion, red bell peppers, jalapeno, lime juice; set aside.
- To prepare taco sauce: Combine mayo, sour cream, garlic powder, lime juice, chipotle sauce, and salt to taste; set aside.
- Place the fish onto a clean plate and lightly pat it with a clean paper towel. Add blackened seasoning to both sides.
- Place a pan over medium-high heat and add butter and oil. Once the butter and oil is hot, add the fish to the pan. Cook, for several minutes, until golden brown on one side. Try not to touch them as they cook. Use a fish spatula or metal spatula to carefully flip the fish over and continue to cook until opaque and completely cooked through, about 3-4 minutes. Take fish off heat and let it rest.
- Warm up the tortillas. Set aside.
- Slice fish into strips. Take your tortillas and add cabbage mix, add fish, mango salsa, and taco sauce. Serve with fresh lime wedges.
