Miso-Honey Grilled Salmon

1 lb salmon fillet (cut into 4 portions)
6 cups chopped kale
3 tsp toasted sesame oil
*sprinkle of sesame seeds
Miso-Honey Marinade:
¼ cup honey
2 Tbsp miso paste
2 Tbsp olive oil
*sprinkle of pepper
Directions
- In a small saucepan over medium heat, melt honey and olive oil. Whisk in miso paste and black pepper. Remove from heat and set aside. When ready to cook the fish, rinse fillets and pat dry with a paper towel. Add fillets to a small bowl and cover with the miso-honey marinade (reserving some marinade to add before serving if you wish).
- Heat a large skillet with a generous splash of olive or coconut oil, over medium-high to high heat. Grill fish for 4-5 minutes, or until the first side gets a great sear. Flip and cook for another 3-4 minutes. Set aside.
- In the same skillet, add chopped kale and cook for 2-3 minutes until slightly softened. Drizzle with toasted sesame oil, toss greens to coat, and sprinkle with sesame seeds. Optional to add extra miso-honey marinade to the fish before serving.
