Pacific Cod with Curried Apple Butter
1 lb Pacific Seafood Cod fillets, skinless, cut into 4 equal portions
Curried Apple Butter Baste:
½ cup Apple Butter
½ cup Mayonnaise
4 Tbsp Bacon, chopped, crisply fried and well-drained
4 Tbsp Shallots, minced
1 Tbsp Curry Powder
1 tsp Salt
- Preheat oven to 400°F.
- Thickly paint baste on all sides of the Cod fillet. Note the dark lined side, where the skin was, and place it DOWN on the baking sheet.
- Place pan into the middle of the oven.
- Bake approximately 12-15 minutes.
