Pacific Cod with Curried Apple Butter

Ingredients

1 lb Pacific Seafood Cod fillets, skinless, cut into 4 equal portions

Curried Apple Butter Baste:
½ cup Apple Butter
½ cup Mayonnaise
4 Tbsp Bacon, chopped, crisply fried and well-drained
4 Tbsp Shallots, minced
1 Tbsp Curry Powder
1 tsp Salt

 

Directions

  1. Preheat oven to 400°F.
  2. Thickly paint baste on all sides of the Cod fillet. Note the dark lined side, where the skin was, and place it DOWN on the baking sheet.
  3. Place pan into the middle of the oven.
  4. Bake approximately 12-15 minutes.
