Sablefish Bites with Herb Salad

6 – 4 oz sablefish fillets, cut in larger bite sized chunks
1 tsp garlic powder
1 Tbsp olive oil
Salt and pepper to taste
Herb Salad:
4 c Lettuce salad mix
½ cup arugula
½ cup basil, fresh
½ cup Italian parsley
¼ cup cilantro, fresh
1 red chili pepper, sliced and deseeded (optional)
Vinaigrette:
5 Tbsp extra virgin olive oil
1 Tbsp sesame oil
1/8 cup minced chives
2 Tbsp lemon juice
1 Tbsp sweet rice wine vinegar (mirin)
2 tsp grated lemon zest, loosely packed
1 Tbsp roasted sesame seeds
Directions
- Heat 1 tablespoon olive oil in large nonstick skillet over medium-high heat.Sprinkle sablefish bites with salt, pepper and garlic powder. Cook fish until just opaque in center, about 3-4 minutes.
- Blend vinaigrette ingredients in a small bowl. Set aside.
- Loosely chop all salad ingredients. Mix together in a large bowl.
- Toss salad with vinaigrette and top with fish bites.
