Steelhead with Granny Smith Apple Salsa

4 portions Columbia River Steelhead
1 lemon, juiced
1 lime, juiced
4 Tbsp honey
2 Granny Smith apples, cut into matchsticks
½ white onion, diced
1 green bell pepper, diced
½ cup chopped fresh cilantro
Salt and freshly ground black pepper, to taste
Directions
- To make the salsa, toss together the lemon juice, lime juice, honey, apples, onion, green pepper and cilantro in a medium bowl. Season with salt and pepper to taste and reserve.
- Prep the Salsa first. Mix all ingredients together.
- Place the Steelhead portions on a sheet pan and brush with Olive Oil and season with Sea Salt. Bake the filet at 425°F for 12-15 minutes. Let sit for 2 minutes and put the Steelhead portions on a tray and top with the Granny Smith Salsa.
