Steelhead with Granny Smith Apple Salsa

Ingredients

4 portions Columbia River Steelhead
1 lemon, juiced
1 lime, juiced
4 Tbsp honey
2 Granny Smith apples, cut into matchsticks
½ white onion, diced
1 green bell pepper, diced
½ cup fresh cilantro, chopped
Salt and freshly ground black pepper, to taste

Directions

  1. Prep the Salsa first. To make the salsa, toss together the lemon juice, lime juice, honey, apples, onion, green pepper, and cilantro in a medium bowl. Season with salt and pepper to taste. Mix all ingredients together and place in refrigerator until ready to use.
  2. Place the steelhead portions on a sheet pan and brush with olive oil and season with sea salt. Bake the portions at 425°F for 12-15 minutes. Let sit for 2 minutes and put the steelhead portions on a tray and top with the Granny Smith salsa.
