Steelhead with Granny Smith Apple Salsa
4 portions Columbia River Steelhead – Buy Here
1 lemon, juiced
1 lime, juiced
4 tablespoons honey
2 Granny Smith apples, cut into matchsticks
1/2 white onion, diced
1 green bell pepper, diced
1/2 cup chopped fresh cilantro
Salt and freshly ground black pepper, to taste
1. To make the salsa, toss together the lemon juice, lime juice, honey, apples, onion, green pepper and cilantro in a medium bowl. Season with salt and pepper to taste and reserve.
2. Prep the Salsa first. Mix all ingredients together.
3. Place the Steelhead portions on a sheet pan and brush with Olive Oil and season with Sea Salt. Bake the filet at 425F for 12-15 minutes. Let sit for 2 minutes and put the Steelhead portions on a tray and top with the Granny Smith Salsa.
