Walnut-Crusted Cod with Dijon

Ingredients

4 (6-oz) skinless cod fillets (or any other white fish) – Buy Now
1/2 cup walnuts
2 tablespoons chopped fresh thyme
2 tablespoons all-purpose flour
1 tablespoon dijon mustard
1 large egg white, beaten
1/4 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons olive oil

Directions

1. Place walnuts in a large freezer bag and crush with a mallet or heavy pot until nuts break into small pieces. Combine walnuts and thyme in a small bowl. Place flour in a separate bowl. In a third bowl, combine dijon and egg white.
2. Press tops of fish in flour and shake off the excess. Dip floured side of fish in the egg mixture and sprinkle with salt and pepper. Dip egg side of fillets in walnut mixture and press gently.
3. Heat oil in a cast iron skillet over medium heat. Place fish (walnut side down) in skillet. Cook until walnuts are golden and toasted, about 4 minutes. Turn fish and place in oven. Bake at 400°F until fish flakes easily with a fork, about 5 minutes.
4. Serve and enjoy! Goes well with potatoes and chickpeas.
