Cedar Planked Steelhead Salad
1 lb steelhead fillet or 4 (4 oz) steelhead portions – Buy Now!
2 Tbsp light brown sugar
2 tsp smoked paprika
½ tsp kosher salt
½ tsp freshly ground black pepper
2 Tbsp olive oil
8 cups Baby spinach
1 cup Cherry tomatoes, halved
½ cup radishes, thinly sliced
- Soak your cedar plank for at least 1 hour, making sure it is completely submerged in the water. For added flavor soak in your favorite beer or wine. Dry the plank with a paper towel.
- In a small bowl combine the brown sugar, smoked paprika, salt and pepper with a fork. Lay the steelhead fillet on the cedar plank skin side down and brush with olive oil. Press the brown sugar rub all over the steelhead.
- Place the cedar plank directly on a hot grill, close lid, and cook over med-high heat for 15-20 minutes, until the steelhead is cooked through and flakes easily.
- Meanwhile combine spinach leaves, tomatoes, and radishes in a salad bowl. Add steelhead flakes and toss with dressing. Add salt and pepper to taste.
