Cilantro Lime Shrimp Fajitas
1 Bag Cilantro Lime Shrimp – Buy Here
2 Tbsp Olive OIl divided
1 Large Red Onion sliced
3-4 Bell Peppers different colors, sliced
A handful of fresh cilantro chopped
1 Lime cut into wedges
Tortillas for serving
1. Heat a tablespoon of oil in a large cast-iron skillet over medium-high heat. Add the onions and bell peppers and sauté for 4-5 minutes until the vegetables have softened.
2. Heat the remaining oil and add the shrimp. Cook for 3-4 minutes until they are cooked through.
3. Return veggies to the skillet and mix to combine. Garnish with fresh chopped cilantro and a squeeze of half a lime and serve with warm tortillas. Enjoy!
