Rockfish with Pesto Panini
4 – 6 oz Pacific Rockfish fillets
8 slices of your favorite bread
½ c pesto
4 slices provolone or Swiss cheese
2 tsp lime juice
4 Tbsp butter
Pinch of Italian seasoning
1. Sprinkle each rockfish fillet with some salt, pepper, Italian seasoning and about 1/2 tsp of lime juice. Heat a pan lightly coated with oil. When it’s hot, add the fillets and cook until lightly brown on each side (flip only once) and to an internal temp of 145˚F. Set aside.
2. Preheat a Panini press to 300˚F. Butter 8 slices of bread, then flip them over and spread the pesto on the opposite side (about 1 Tbsp on each slice). Place 4 slices, butter side down, on the Panini press. Add the fillets (cut to fit bread if needed) and 1 slice of cheese. Top with other buttered slice of bread. Close the Panini press and grill for 3-5 minutes.
