The swordfish is known for its sharp-pointed bill, which is used for protection and hunting prey. It is a highly migratory billfish, prized for its fighting ability by sports fishermen, and prized by commercial fishermen for its economic value. They can grow to almost 15 feet long and weigh as much as 1400 pounds, but average size is 50–200 lbs. Swordfish is a firm-textured fish that appeals to almost any palate. With its moist, flavorful, slightly sweet taste and moderately high oil content, it has a firm, meaty texture that is great for baking and broiling, and perfect for grilling and kabobs. It also smokes well.
