Sole Roulade

4 sole fillets
1 cup tomatoes, skinned and very finely chopped (seeds removed)
2 Tbsp goat cheese
4 to 6 Tbsp bread crumbs
1 tsp grated lemon rind 1/2 cup white wine
2 Tbsp fresh dill, chopped Salt and pepper to taste
Paprika (optional)


  1. Preheat the oven to 350°F.
  2. Mix the finely chopped tomatoes with goat cheese, bread crumbs, lemon rind and dill. Spread the mixture on the fillets and roll up tightly. Place the rolled fillets close together in a baking dish and cover with the wine.
  3. Season well with salt and pepper. Sprinkle with paprika for color.
  4. Cover and bake for 20 minutes or until Dover sole is opaque. Serve immediately.
