Fiesta Salad Bowl w/ Gluten-Free Italian Breaded Sole

1 package Pacific Sustainable GF Italian Breaded Sole
1 can black beans, rinsed and drained
1 ear corn kernels (or canned), rinsed and drained
1 avocado, cubed
3 radishes, sliced
½ cup cilantro, chopped
1 cup baby tomatoes or 1 red bell pepper, sliced
6 cups salad greens of your choice
1 lime, juiced
*sprinkle of feta cheese (optional)
- Preheat a large skillet with a splash of olive oil over medium-high heat. Place fish filets on the skillet, getting a good sear on the first side before flipping it. Cook until done, approximately 6 minutes total.
- In the meantime, assemble salad ingredients. Slice the sole into strips and place on top. Drizzle with lime juice and sprinkle with feta cheese to garnish.
