Cedar Planked Steelhead Salad

Ingredients

1 lb steelhead fillet or 4 (4 oz) steelhead portions
2 Tbsp light brown sugar
2 tsp smoked paprika
½ tsp kosher salt
½ tsp freshly ground black pepper
2 Tbsp olive oil
8 cups Baby spinach
1 cup Cherry tomatoes, halved
½ cup radishes, thinly sliced
Balsamic vinaigrette

Directions

  1. Soak your cedar plank for at least 1 hour, making sure it is completely submerged in the water. For added flavor soak in your favorite beer or wine. Dry the plank with a paper towel.
  2. In a small bowl combine the brown sugar, smoked paprika, salt and pepper with a fork. Lay the steelhead fillet on the cedar plank skin side down and brush with olive oil. Press the brown sugar rub all over the steelhead.
  3. Place the cedar plank directly on a hot grill, close lid, and cook over med-high heat for 15-20 minutes, until the steelhead is cooked through and flakes easily.
  4. Meanwhile combine spinach leaves, tomatoes, and radishes in a salad bowl. Add steelhead flakes and toss with dressing. Add salt and pepper to taste.
