Cooked Shrimp Caesar Salad With Dijon Dressing
1 lb bag Newport Cooked and Peeled Tail-off Shrimp
1 Clove Garlic, minced
½ tsp Dijon Mustard
½ Tbsp Lemon Juice
½ Tbsp Olive Oil
1 Hard Boiled Egg, chopped
½ Head Romaine Lettuce, chopped
2 Anchovy Fillets, optional
Salt and Pepper to taste
- Thaw the cooked shrimp overnight per instructions on the package.
- Mix the mustard, oil and lemon juice in a small bowl.
- Put chopped lettuce with shrimp in bowl and pour dressing over the top and mix well.
- Season to taste and garnish with the cooked eggs and anchovy fillet.
