Cooked Shrimp Caesar Salad With Dijon Dressing
1 lb bag Cooked and Peeled Tail-off Shrimp
1 clove garlic, minced
½ tsp Dijon mustard
½ Tbsp lemon juice
½ Tbsp Olive Oil
1 hard boiled egg, chopped
½ head romaine lettuce, chopped
2 anchovy fillets, optional
salt and pepper to taste
- Thaw the cooked shrimp overnight per instructions on the package.
- Mix the mustard, oil and lemon juice in a small bowl.
- Put chopped lettuce with shrimp in bowl and pour dressing over the top and mix well.
- Season to taste and garnish with the cooked eggs and anchovy fillet.
