Honey Ginger BBQ Gulf Shrimp

Ingredients

1 lb raw Gulf Shrimp, peeled and deveined
4 Tbsp vegetable oil
1 tsp salt
Wooden skewers (4-inch)

Sauce:
1 1/2 cups apple cider vinegar
1/2 cup mild honey
1/2 cup ketchup
1 1/2 Tbsp hot sauce
4 large garlic cloves, minced
2 Tbsp minced peeled ginger
1 tsp salt

Directions

  1. Stir together all sauce ingredients in a 2 quart heavy saucepan and briskly
    simmer, uncovered, stirring occasionally, until thickened, 25 to 30 minutes. (Stir frequently
    toward end of cooking to prevent sticking.)
  2. Thread 1 shrimp onto each skewer so that the shrimp lie flat.
  3. Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high for gas).
  4. Meanwhile, brush shrimp with vegetable oil and sprinkle evenly with salt.
  5. Grill shrimp, around 2 minutes, turning over once. Brush shrimp with sauce from
    the saucepan, then turn.
  6. Brush shrimp with additional sauce then grill until just cooked
    through, 1 to 2 minutes.
  7. Serve with reserved sauce.
