Seared Cilantro Lime Scallops

1 lb bay/calico scallops
2 Tbsp of olive oil
2 Tbsp cilantro, chopped
3 Tbsp butter
3 cloves garlic, minced
¼ cup lime juice
1 tsp crushed red peppers
Salt and black pepper
Directions
- Pat the scallops dry with a paper towel (moisture on scallops will prevent browning). Season the scallops with salt and pepper.
- Heat a large pan on medium-high heat and add olive oil. Cook scallops until lightly browned on both sides, about 2-3 minutes. Once they are done, remove from heat and let them rest for 2-3 minutes.
- While scallops are resting add butter and garlic to pan. Cook for 30 seconds to brown, then add the crushed red peppers and lime juice. Mix everything well and then add cilantro, salt, and pepper. Let everything cook for 1-2 minutes and then take pan off of the stove.
- Spoon the butter over the top of the cooked scallops. Serve and enjoy!
