Ingredients

2 lb bag peeled and deveined shrimp
¼ lb asparagus, cut in 2 inch lengths
¼ lb fresh snow peas
1 red bell pepper, cut into strips
4 sundried tomatoes, chopped
1 tsp garlic, chopped
1 Tbsp fresh basil, chopped
1 lb hot cooked linguini pasta
2 Tbsp olive oil
Shredded parmesan cheese

Directions

  1. In a skillet, sauté shrimp in oil for 1 minute.
  2. Add vegetables and garlic. Continue to cook for 2 more minutes.
  3. When shrimp is done, toss in linguini and basil.
  4. Sprinkle with parmesan and serve immediately.
